The inspiration for Amy’s Organic Black Bean Vegetable Soup came from a lovely restaurant in Puerto Escondido, Mexico and has now made its way into Amy’s repertoire so the whole family can enjoy it! This recipe is rich in flavor from its vegetables and black beans, and it is gluten free, dairy and lactose free, and soy and tree nut free. It is also suitable for vegan and kosher diets.
